Pork Shoulder

  1. Heat grill to 225° F
  2. Rub meat generously with
    • Salt
    • Coarse black pepper
    • Paprika
    • Cumin
    • Garlic powder
  3. Place meat on grill
  4. Don't touch it
  5. Remove from grill when internal temperature is 200° F. (usually 13 - 14 hours)
  6. Let rest for a minimum of 1 hour, preferably 2

Reverse sear Tri-Tip

  1. Heat grill to 225° F
  2. Rub meat generously with
    • Salt
    • Coarse black pepper
    • Rosemary
    • Cumin
    • Garlic powder
    • Onion powder
    • Coffee
  3. Grill until an internal temperature of ~110° F
  4. Remove from grill and place in oven (not turned on). This will help to retain heat while you raise the grill temperature to 450°-475° F
  5. Return meat to grill and sear both sides. Ensure internal temperature hits 135° F
