Pork Shoulder
Heat grill to 225° F
Rub meat generously with
Salt
Coarse black pepper
Paprika
Cumin
Garlic powder
Place meat on grill
Don't touch it
Remove from grill when internal temperature is 200° F. (usually 13 - 14 hours)
Let rest for a minimum of 1 hour, preferably 2
Reverse sear Tri-Tip
Heat grill to 225° F
Rub meat generously with
Salt
Coarse black pepper
Rosemary
Cumin
Garlic powder
Onion powder
Coffee
Grill until an internal temperature of ~110° F
Remove from grill and place in oven (not turned on). This will help to retain heat while you raise the grill temperature to 450°-475° F
Return meat to grill and sear both sides. Ensure internal temperature hits 135° F
